brieThis is a fantastic vegetarian Spanish recipe, guaranteed to bring the whole family to the table with its with melting brie filling.

Ingredients

4 flour tortillas
200g packet of Brie, sliced
200g (7oz) green seedless grapes, halved
1tbsp finely chopped tarragon
2tsp smoked or sweet paprika
1tbsp olive oil

Directions

  1. Lay the tortillas out on a clean work surface. Divide the Brie between the flour tortilla, arranging the pieces on one half. Then scatter over the grapes and tarragon. Season each with a little paprika and a little salt.
  2. Fold each tortilla in half to make a half moon and brush with a little olive oil.
  3. Heat a large griddle pan until hot and then cook the tortillas for 3-4 mins, turning once, until crispy and cheese is starting to ooze. Cut into wedges and serve immediately with salad.
