This is a fantastic vegetarian Spanish recipe, guaranteed to bring the whole family to the table with its with melting brie filling.
4 flour tortillas
200g packet of Brie, sliced
200g (7oz) green seedless grapes, halved
1tbsp finely chopped tarragon
2tsp smoked or sweet paprika
1tbsp olive oil
- Lay the tortillas out on a clean work surface. Divide the Brie between the flour tortilla, arranging the pieces on one half. Then scatter over the grapes and tarragon. Season each with a little paprika and a little salt.
- Fold each tortilla in half to make a half moon and brush with a little olive oil.
- Heat a large griddle pan until hot and then cook the tortillas for 3-4 mins, turning once, until crispy and cheese is starting to ooze. Cut into wedges and serve immediately with salad.
